Thai Jungle Curry Paste

This curry paste has taken a long time to make it onto the website. Mainly because I have never been convinced that enough people enjoy eating a curry this spicy. Judging by the amount of requests I get, I was wrong, so here it is. Of course a curry paste shouldn't be just about heat and there is a lot else going on here, it's not a toned down version for Western palates so it's also strong on the shrimp paste as well. Definitely not everyone's cup of tea, or pot of curry, this should be cooked without coconut milk. Also recommended to follow the directions for cooking carefully as this paste has to be cooked by adding it to water and cooking, instead of being heated directly which would induce sneezing attacks or worse!
Dried Red Bird's Eye Chillies (17%), Shallots , Sunflower Oil, Thai Fish Sauce (Fish), Lemon Grass , Krachai (9%) Garlic, Shrimp Paste (Crustaceans), Galangal, Coconut Palm Sugar, Kaffir Lime Leaves, Coriander (3%) , Salt, Thai Basil.

Contents will cook 500g (1 lb) meat, fish or vegetables.

WOW! UNBELIEVABLE!

If you like hot & spicy then this is for you. I made this for the whole family (we all like spicy foods) and we were literally blown away. It’s not for the faint hearted! The aromas when cooking matched the authentic taste and I can truly say that this curry is the best I have tasted! Will be ordering again

mythaicurry Jungle Curry Paste is excellent

This is a well constructed paste with good heat, nicely ground so it's not grainy.
Apparently there are issues with frying the paste in oil because of fumes - well I followed the revised instructions and added it to water and it was great.
Nitsi has asked if she should make it hotter - I say no, it'll chase some people off. Instead, tell the heat fanatics (like me) how they can make it hotter if they need to - I added chopped Bird Eye Chillis (or Mouse Dropping Chillis if you're OK with that name ;-).
I made my first one up with duck and a mix of veg - baby corn, asparagus, sugar snap peas, tenderstem broccoli, but I needed the red chilli for a colour contrast, and I look forward to experimenting with other meats soon.
No Coconut milk though...

Harry, adding birds eye chillies to this probably qualifies you as an honorary Thai;-)

Tasty and authentic curry paste!

Full of flavour and complexity, this really is the most amazing Massaman curry paste! I've tried all of the My Thai curry pastes and they're all excellent but the Massaman is my favourite as it's so comforting, especially on a dark winter's night.
