Thai Jungle Curry Paste

This curry paste has taken a long time to make it onto the website. Mainly because I have never been convinced that enough people enjoy eating a curry this spicy. Judging by the amount of requests I get, I was wrong, so here it is. Of course a curry paste shouldn't be just about heat and there is a lot else going on here, it's not a toned down version for Western palates so it's also strong on the shrimp paste as well. Definitely not everyone's cup of tea, or pot of curry, this should be cooked without coconut milk. Also recommended to follow the directions for cooking carefully as this paste has to be cooked by adding it to water and cooking, instead of being heated directly which would induce sneezing attacks or worse!
Dried Red Bird's Eye Chillies (17%), Shallots , Sunflower Oil, Thai Fish Sauce (Fish), Lemon Grass , Krachai (9%) Garlic, Shrimp Paste (Crustaceans), Galangal, Coconut Palm Sugar, Kaffir Lime Leaves, Coriander (3%) , Salt, Thai Basil.

Can you help me

I normally make my own curry pastes but it's hard to get hold of Krachai (fingerroot) to make jungle curry so I ordered some of yours.
I should add thatI used to cook Malaysian food professionally.
To be honest I prefer my homemade pastes but if you could let me know where I can buy Krachai I would really appreciate it.

I was excited to see that Nitsa has launched this new paste. The most exciting thing about it for me is that it clearly is not dumbed down Thai food. It has tremendous heat and also great aromas of shrimp paste and doesn't compromise in any way. I followed Nitsa's suggested recipe and the end result was stunning. It is packed with flavour, although if I'm honest, I would say that the heat levels are above what I enjoy on a daily basis. The trick I found is to serve it in a separate bowl, and then eat it alternating with rice and a salad. That keeps the burn under control! It is not for the faint hearted but beneath the chili heat is a layer of complex flavour that is unique to Thai food. I do hope Nitsa produces some more of these unapologetically Thai dishes in the future!

Excellent with BBQ Pork Chops

Marinate two large pork chops using one packet of Chiang Mai Curry Paste for 6 hours in a fridge. Then place into a cast iron dish / skillet and cook on the BBQ for 8 to 10minutes until cooked - excellent
