Sometimes seen on Thai restaurant menus written in English as "Kaeng Kari". or แกงกะหรี่ in Thai. This curry paste is notable for its use of spices more generally associated with Indian curries. However, the spicing is lightly balanced allowing the typical flavours of a Thai curry to still predominate. A mild curry popular with children and adults alike.

Fresh and Full of Flavour

We tend to mix our own spices when making a curry which can lead to a lack of variety so when we were given a mythaicurry yellow curry paste from a friend to try we were really pleasantly surprised by the fresh new flavours in the Thai Curry 👍
Couple of suggestions:
We substituted small florets of cauliflower instead of the potatoes
We used Lidl's Coconut Milk which is much higher in coconut solids than most other brands and
We held back some of the coconut milk and used it sparingly to get the consistency of the sauce right
