I have to say that I have loved every paste that I’ve ever bought through My Thai.
They all give you a genuine taste of Thailand just as we’ve experienced on our trips there. The red paste is my go to flavour for a prawn curry, its absolutely delicious, especially when its miserable weather outside and I’m wishing I was sitting on a Thai island in the sun.
This is my go to company for Thai Curry pastes, always delicious and tasty. I've never found any as good as these!
On both occasions, I followed the instructions both on the package and online. Using coconut milk with 70% coconut solids meant the dish was very smooth and creamy but lacked spiciness, despite showing medium strength. I lived for 4 yesrs in South East Asia, 2 of them only 50 miles from the Thai border and as a result became used to very spicy food. So I felt the need to add some chilli. I used 4 home-grown Trinidad Cherry Pepper Chillis (80,000 Scoville Heat Units) which brought the spiciness up to the level shown on the package. I have really enjoyed the flavours and would cheerfully recommend this product.
I have had 3 pastes now, massaman that I did with beef short rib, and a green and red curry - all have been delicious! I have ordered 3 more and the marinade!
You can tell they are made with care and the notes with each are lovely. I will be a returning customer for the long term! Thank you!

You would need to add an extra lamb Shank of course and a few more potatoes, you could also have another can of coconut milk handy in case you feel you want to add more. If you check out the recipe notes at the bottom of the page there are also some tips for cooking this if the lamb Shanks are too large for a casserole dish. Hope that helps
